Healthy Summer Snacking

We had so much fun chatting about Healthy Summer Snacking for Kids last week on KGW Portland Today, we decided to follow it up with a whole post packed with ideas!

I have to admit, the rainy weather in Portland last week had me worried Summer might never come, but after spending a sun-drenched weekend in Chicago and now writing this as I sip iced coffee on a patio in Marin County, my Summer vibes are high :)

There is something truly magical about the beginning of summer when everyone comes out of hibernation and the energy is almost palpable. As both the travel and the heat pick up, staying well fueled is key to not losing steam. 

All of the snacks below are totally kid-friendly, but were created with Mom in mind. We hear it time and time again from our kick-ass mama clients that scavenging their kids leftovers often has to suffice as a tide-me-over until the next meal. Not anymore ladies! These snacks will nourish all members of the family and help everyone squeeze the most out of Summer.

Almond Butter Banana Ice Cream

Here's what you need:

1 frozen banana

2 Tbsp almond butter

How to make it:

Blend and top with cocoa nibs and large flake sea salt, or toppings of choice.
