Portobello Pizza

This is an old favorite of mine that is finally going on the blog! It is a fun weeknight meal that the whole family will love. Pizza with a twist! 

I've provided the basic margarita pizza recipe. Make it your own by getting creative with the toppings. Some I've tried and highly suggest: Italian sausage, caramelized onions and sun dried tomatoes. Go crazy! Pair with a side salad to make this a complete meal. Bon appetite!

Portobello Pizza


  • 1 large portobello cap, stem removed

  • 1/4 cup marinara sauce

  • sprinkle of dried oregano

  • 1/3 cup grated organic mozzarella

  • 2 sliced cherry tomatoes

  • fresh basil and red pepper flakes to garnish


  1. Preheat oven to 400F.

  2. Lightly drizzle both sides of mushroom cap with olive oil. Sprinkle with oregano and a dash of salt, then bake for 8 minutes, cap side up.

  3. Once par-baked, pull mushroom out of the oven, flip cap side down and top with marinara sauce, mozzarella and sliced cherry tomatoes. **If adding additional toppings, do it here.

  4. Bake for 20 minutes, or until the portobello cap is soft and the cheese is melted.

  5. Garnish with fresh basil and red pepper flakes.
