Grilled Peach, Pistachio & Pork Arugula Salad with Feta Cheese & Mint Shallot Vinaigrette

GRILLED PEACH & PORk SALAD

ingredients

for the salad

  • 2-4 extra lean pork loins (boneless), ~12 oz
  • 4 cups arugula
  • 2 cups diced tomatoes
  • 1/4 cup pistachios
  • 1/4 cup crumbled feta
  • fresh mint for garnish

for the peaches

  • 2 ripe, but firm peaches (nectarines work too!), halved and pitted
  • 1/2 cup olive oil
  • 2 minced shallots
  • 1 tsp salt
  • 1 tsp ground black pepper

for the dressing

  • 1/8 cup lemon juice
  • 1/4 cup olive oil
  • 1 shallot finely minced
  • 1/2 tsp salt
  • 1/2 TBSP honey
  • 1/2 cup fresh mint, minced

instructions

  1. Grill pork to your liking (check out this link for the 7-6-5 method).
  2. Mix oil, shallots, salt and pepper and brush mixture on peaches. 
  3. Grill peaches over medium-high heat, ~3 min skin side up.
  4. Whisk together dressing ingredients.
  5. Each salad plate gets: 1 cup arugula, 1/2 cup diced tomatoes, 1/2 grilled peach, 3 oz pork, 1 TBSP crumbled feta and 1 TBSP pistachio.
  6. Toss each salad with 2 TBSP dressing and garnish with fresh mint.
