Kale salad is one of those things that sounds so righteous and holy it has basically become synonymous with healthy. The thing is, that it is SO much more than just a cliche superfood. A kale salad done right is so delicious and amazingly satisfying - I literally get cravings for it. Really really.
It's not just me, I promise. My chicken-wing fanatic, BBQ-lovin' fiance, Barrett, is equally obsessed with kale salad, if not more so. Actually, as I think about it, his friends all love it too. I was not sold on kale salad from the get-go. How could it be good raw?!
This tahini-lemon-honey dressing converted me for life. I could give you all kinds of mouth-watering adjectives, but you really just have to try it. The trick, I realized, is using A LOT of lemon in the dressing so it marinates and softens the kale - kinda like how ceviche is "cooked" in citrus.
Kale is specially designed for busy, active women like us, who want good food in a moment's notice.
You know how a salad sitting in dressing too long gets soggy and gross? Kale does not do that. The longer it marinates in the dressing, the better. It's all about getting a big bag of pre-chopped kale, tossing it in this dressing and then you have a quick, easy, healthy, family-friendly, kids-will-love-it-too, crowd-pleasing lunch and/or dinner ready to go, all week long. Boom.
2-Steps to Killer Kale Salad:
1. Combine all the ingredients below in a big bowl and mix well with an immersion blender or in a food processor. (Note: Immersion blenders make sauces and soups SO much easier and cut the amount of dishes in half #winner #musthave).
- 1/4 cup cashew milk, unsweetened (almond or coconut milk would work just as well) - you can add more or less depending on how thick you like it
- 1 1/2 tbsp tamari
- 1/4 cup honey
- 2 cloves of garlic
- Juice from 2 lemons
- 1/2 cup tahini*
- 1 large bunch of kale, shredded and de-stemmed (or purchased pre-chopped, gotta love that!)
2. Dress the kale and other veggies as desired, making sure each leaf is coated in deliciousness.
That's it! Dig in!
*P.S. Not sure about tahini?
It's basically just like peanut butter, but made out of sesame seeds. It's a little bit thinner than PB, so awesome for sauces and dressings. It's also loaded with healthy fats and anti-aging vitamin E.
