Spicy Sweet Summer Melon Salad

This weekend has been all about rest, rejuvenation and doing all of the things that make me happy. If you never give yourself this time, I highly recommend setting aside a weekend. It has been wonderful!! 

The sun has been shining in Portland and I've been feeling fresh, refreshing vibes. This inspiration spilled over into my kitchen yesterday and an amazing salad was born. Seriously, you must make this! Or at least make the Fresh Herb Orange Dressing... and the Spicy Roasted Walnuts. Well, you might as well just cut up some melon and toss it with arugula at this point. OK, just make the whole thing. You won't be disappointed! :)

Fresh Herb Orange Dressing

  • orange, juice and zest
  • 1/4 cup olive oil
  • 1/8 cup rice vinegar
  • 1/2 cup packed fresh basil
  • 1/2 cup packed fresh mint
  • 1 large clove garlic
  • sea salt to taste
  1. Put all ingredients in food processor and mix until herbs are chopped and dressing is combined. Makes ~1 cup.

Spicy Roasted Walnuts

  • 2 cups walnut halves & pieces
  • 1 egg white
  • 1 tsp cayenne
  • 1 tsp paprika
  • 1 tsp garlic salt
  • 1 tsp dried basil
  1. Whisk egg white and spices together.
  2. Toss with walnuts until evenly coated.
  3. Spread on baking sheet and roast for 15 minutes at 350F. 

Spicy Sweet Summer Melon Salad

  • Arugula
  • Cantaloupe, cubed
  • Watermelon, cubed
  • Fresh Herb Orange Dressing
  • Spicy Toasted Walnuts
  • Sea Salt to taste
  1. Top arugula with cubed melons, dressing and walnuts as desired.
  2. Add a sprinkle of sea salt and enjoy!
