After being gifted a Mango by my Zesty partner in crime, Anna, we decided to Taco Tuesday with some tropical flair.
We started off with whole wheat tortillas.
Then, we browned 99% lean ground turkey on the stove top with cumin, turmeric, coriander, onion powder, garlic salt and pepper.
Next, we diced an avocado and opened up a can of Amy's Organic Refried Black Beans.
To top it all off, I made a mango salsa with just a few simple, fresh ingredients...
Mango Jalapeño Salsa
- 1 mango
- 1 jalapeño, seeded
- 1 roma tomato
- 1/8 whole red onion
- Juice of 1 lime
- 1/4 cup chopped cilantro, ~1/2 bunch
- Sea salt to taste
- Dice mango, jalapeño, tomato and red onion. Squeeze in lime juice and mix.
- Chop cilantro and stir in.
- Add sea salt to taste.
