Gluten Free Lemon Chia Seed Muffins

I have a confession... I LOVE dessert! Please tell me I'm not alone. Having sweet treats nourishes a happy life balance for me. This is a key component to finding a healthful diet that will last for a lifetime. My compromise is I never use butter, white flour or white sugar when I bake. It turns out it really isn't much of a compromise at all because my healthy treats taste better to me than those with refined, processed ingredients. Try these gluten free lemon chia seed muffins, my take on the average lemon poppyseed muffin, and let me know what you think of wholesome baking. I think you are going to like it!


  • 4 cups almond meal/flour
  • 4 Tbsp chia seeds
  • 1 tsp salt
  • 1 tsp baking soda
  • zest of 2 lemons
  • juice of 1 lemon
  • 4 eggs
  • 1/4 cup applesauce
  • 1/4 cup olive oil (I used a Meyer lemon infused olive oil)
  • 1/2 cup honey

Preparation Instructions

  1. Preheat oven to 350F.
  2. Mix together dry ingredients. In a separate bowl, whisk together wet ingredients. 
  3. Combine wet and dry ingredients, then pour into lined muffin tins.
  4. Bake for 25-30 minutes. Let cool and enjoy!
