Rainbow Carrot and Parsley Summer Salad

Healthy eating involves so much more than the combination of foods that fill our plate. Healthy eating is also about pleasure and joy. The day I realized this was a real game changer. Widening the definition of "healthy" allows for eating foods just because we love them! For me, this understanding helped to shed the guilt weighing me down after treats, such a summertime ice cream. I no longer had to eat "perfectly" - whatever that means - and instead could feel proud that I allow for pleasure and flexibility into my life.

I also began to contemplate what genuinely brings me joy when eating.  Of course flavor and taste is high on the list, but I realized that sharing food with good company trumps all else. Hence I began my quest to learn to cook - so I could selfishly enjoy delicious food with people I love! 

This may sound silly, but I realized bright colors also make me so happy. It's somehow so satisfying to have created a beautiful array of colors, inspiring nourishment and health. With summertime peaking it's head around the corner, and potluck season trailing close behind, I was excited to share this super simple, flavorful and SO colorful salad recipe.  The tahini and yogurt dressing creates a nice richness with no oil added! I added the fresh OJ for a touch of sweet to balance the flavors. 

Most of the color in this salad is from rainbow carrots. Normally I purchase these from Trader Joe's, but when the season allows, I prefer to get them at Farmer's Market. Apart from being beautiful, the variety of colors provides a diversity of disease-fighting, anti-inflammatory antioxidants - the more the better! That said, any type of carrot is sure to look gorgeous.

Ingredients                                                   

Salad:

  • 6 large grated rainbow carrots
  • 1 bunch fresh parsley                          

Dressing:

  • 1/2 cup Greek yogurt (plain)
  • 1/4 cup Tahini*
  • 1 TSP salt
  • 1-2 cloves garlic
  • Juice from 1 lemon
  • Juice from 1 orange

Preparation: 

Combine dressing ingredients in food processor and mix until smooth. Toss together grated carrots and parsley, coat evenly with dressing, and chill for at least 20 minutes before serving. 

*Tahini is like a peanut butter made from ground sesame seeds. It has a tangy, nutty flavor.  Besides loving the taste, it is a great source of plant-based protein and heart healthy fats. 

I like to make a big batch of this salad and it lasts in the fridge for a week.
